If you find yourself getting in a rut, check out the recipe below that you can use in lots of different ways to add some variety to your yeast free diet!

Black Bean Salsa

– 1 (15 oz) can black beans, rinsed and drained
– 1 c frozen white corn, thawed
– 1/2 c red bell pepper, chopped
– 1/2 c fresh cilantro, chopped
– 4 green onion, chopped
– 1/4 tsp salt

In a large bowl combine beans with corn, red pepper, cilantro, green onion and salt. Serve with yeast diet    approved chips, or as a garnish for a salad, soup or eggs.

*If you are avoiding corn simply leave it out – the recipe still works fine without it!
