Getting the kids to eat their vegetables can be a challenge but this recipe makes it easy: put them in their burgers. Check out this delicious way to incorporate vegetables into a savory burger sure to satisfy even the pickiest of eaters.
Simply juice vegetables and use the pulp, which has already been prepared for you! Simply pick out the large pieces of vegetables that may not have been pulverized fully during the juicing process.
Use a few handfuls of this great pulp inside any burger recipe you make. The vegetables will give you a lot of flavor as well as fiber and other nutrients. This recipe greatly extends the meat.
Savory Burgers
Ingredients
- 1 lb ground meat (chicken, turkey, beef, lamb or buffalo)
- 2 eggs
- 2 handfuls pulp from juicing (could be a combination of carrot, celery, spinach, beet, parsley, or other vegetables)
- ½ cup walnuts, finely chopped (optional)
- ½ teaspoon thyme
- ½ teaspoon dill
- ½ teaspoon savory
- ½ teaspoon oregano
- ½ cup fresh salsa (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
In a large bowl, mix all ingredients except olive oil. Let the meat mixture absorb all ingredients and flavors for about 10 minutes. Then begin making burgers. In a large iron skillet or large sauté pan, add oil and as many burgers as will fit in the pan. Cover and cook on medium high heat for 8 minutes. Then flip burgers and cook on remaining side another 5 minutes or until done.
Have some fun with the presentation by adding lettuce “hair”, tomato “eyes” and a half cucumber “smile” and watch the burgers disappear!
